Ingredients
- 2 cups cooked brown rice
- 1 red apple, cored and chopped
- 1 red onion, finely chopped
- 1 red capsicum, diced
- 1/3 cup raisins
- 1/3 cup parsley, chopped
Dressing
- ¼ cup olive oil
- 1/3 cup apple cider
- 2 tsp maple syrup
- 1 garlic clove, crushed
- Salt and pepper to taste
Method
- Add rice, apple, onion, capsicum, raisins and parsley into a large bowl. Toss gently to combine.
- To make the dressing, combine dressing ingredients in a screw-top jar. Shake well to combine.
