This avocado dip recipe is so simple and pleasantly zesty, perfect for sandwiches, chips or your next Mexican dish.

Ingredients
- 1 avocado
- 200 g tinned chickpeas
- Grated zest and juice from 1½ lemons
- ½ bunch coriander, finely chopped
- 1 garlic clove, minced
- 80–100 ml water
- 2 tsp olive oil
- 1 tsp ground cumin
- ¼ tsp chilli powder
- ¼ tsp salt
- pepper to taste
Method
Blend all ingredients in a food processor until well combined.
