Ingredients
- 2 capsicums, seeds and cores removed
- 1 zucchini
- 1 eggplant
- Olive oil
- 1 stalk of thyme
- 1 bay leaf
- 1 sprig of rosemary
- 1 garlic clove, unpeeled
- Salt and black pepper
Method
- Cut the vegetables into matchsticks, slices, cubes or any other shape you like. In a mixing bowl, toss the vegetables with a drizzle of olive oil, the herbs, garlic and some salt and pepper.
- Bake for 20 minutes at 200°C directly in the air fryer basket or in an air fryer-safe dish.
